It looks like you are getting the Southwest 6-pack option (some airlines happen to like this arrangement) so most likely you have to go to your setup/options menu and select other choices available there.

Whenever I installed the 800/900 pmdg it switched to that

Yes, go to the PMDG menu and select "Styles", then select PFD/ND.
