How can I stop the Cessna 208 appearing as AI?

Drag the 208 folder to any other place other than aircraft.

You must live in the desert away from water for float planes to seem odd. Here in the Seattle area, they are flying around everywhere. It would seem odd to NOT have them as part of the AI.

The AI aircraft can be disabled by changing the title in the aircraft.cfg file. I'd be happy to have them cut in say a 10th of the amount I see now. I live in SoCal and IRL never see Float Planes down here....
