I've discovered that for some unknown reason, most of the aircraft parked and/or moving around at various airports all over my FSX world are SAS planes....

 

I do not have any 'traffic' addons loaded.

 

Any idea why that may be happening and is there a way of changing this to various other airlines?

Have you installed Scansim EKCH? If that is the case the installer has an AI package that puts SAS and other traffic at Copenhagen and for some reason all over the world.
