I have a very weird issue where if input any control movement in the PMDG 737NGX, the aircraft will bank full right and won't come out of it until it crashes into the ground

Sounds like you have some sort of hardware that your simulator assigned a roll axis to. Check your axis assignments in the simulator control options. Use the drop down menu to go through all of the axes, looking for any roll axes assigned to something that shouldn't have one. As an example, my push to talk switch for my ATC microphone gets recognized by FSX and assigned an axis.
