As we know, the mouse scroll wheel is used for zoom when not hovering over a knob... 

 

I have a problem where I'll miss the knob and suddenly I'm zooming in or out. Anyway to disable mouse zoom so that I don't inadvertently change my view?

No. I have the same problem and posted about this. Others did to. It seems to be hardcoded into the sim. Unfortunately... Luckily a single press of W resets the view again.
