I have been using the default ATC to do some flights when I am less motivated 

 

However, say I pick in the setup screen flight number 1234 callsign Speedbird

I'd expect ATC like in FSX to say ''speedbird 1234 contact'' 

but they say ''1234 contact'' I can't get them to say the callsign. this goes for any call sign, not just speedbird all defaults no not work 

 

any help would be great

You will need an addon like Editvoicepack, this will add the proper names to your aircraft. Assuming you are of course using an ai traffic add on
