Maybe some insight as to why this might be happening:

Whenever I start initial take off rollout on the runway with the default 737-800 I don't even get the chance to pull the stick to lift the aircraft because the aircraft takes off on its own.

 

Why is this happening?...

It is almost certainly trimmed for an excessive amount of nose up pitch (which it shouldn't be, typically, depending on the weight, the trim setting for a 737 take-off should be on maybe 3 or 4). As a result, the moment you get near flying speed, the excessively trimmed elevators are causing it to rotate on its own. So, try backing off the elevator trim.
