I've very lightly dabbled in Flight Sims (and a few hours of full size flying) over the years but FS2020 has got me interested in progressing with sim'ing as a proper hobby and I would like to record my progress formally from the outset in a LogBook as I would for full size. Does anyone know if FS2020 will support this and if not, would you recommend any other Windows software to use instead or as well?

There is a rudimentary automatic log book in the sim.

You might consider using the same kind of paper log book you use with real aircraft.  If that's too expensive, make a file on your computer, text or preferably spreadsheet.  There are probably inexpensive log book programs you can get as well if you're going for authenticity.

As for MSFS supporting it... well, you are sitting in the cockpit of an aircraft and you have a working Hobbes and sometimes even a clock. 😄 You can record exact amounts of fuel from the fuel dialog.  The Hobbes appears to be recording tach hours rather than clock hours, but I can't be totally sure and it may be different on different aircraft.
