In MSFS 2020 you can change the curve (sensitivity) except when an update does not allow you to do that.

Using FSUIPC 7 (and disabling controller adjustment inside MSFS 2020) you can set that same curve AND you can set the effectiveness too. For example at 50% effectiveness, if you pull the stick hard right, the sim will react as if you only pulled the stick half way right. This will really make the stick less tricky. But you will lose the ability for applying full aileron if such a situation arrives where you need to do that.

In my case it is far more likely to get myself in serious trouble by over reacting on stick or rudder than underacting. So I have never used 100% effectiveness in FSX nor in MSFS 2020 unless there was no other option.

3 steps, so it takes awhile. (Step 1 is long but was unnecessary in FSX because FSX Options/Controllers window had a check box "Enable Controllers" to turn all controllers ON  or  OFF really fast).

1 Make duplicates of the all the presets you have showing in MSFS Options Controls. (Use the 'Preset Manager' at the bottom of the Controls window).  If you have 2 controllers (yoke or stick and a rudder) then you have two presets to duplicate (clone). I name the presets the same as the old preset names, but put 'Dead' as the first word.

Turn off all those axis in your new presets that are too sensitive using MSFS Controls window (i.e. 'clear current input'). Don't worry you still have your old presets which still have the controllers working and you can always just go back to using them.

 

2 Now calibrate and set the curves in FSUPIC.

3 Since FSUPIC does not have a GUI screen for 'effectiveness' you have to  just set up only the calibrations and curves and then save it (it saves to FSUIPC7.INI). Then open FSUIPC7.INI and change two numbers for each axis for which you wish to change effectiveness. (You probably want to change aileron, elevator, and rudder axis but not change any brakes or trim axis).

FSUIPC is still in beta free download, but it works, just not yet full featured like the old ones for FSX and PMDJ.

How to text edit FSUIPC7.INI to set 'effectiveness' (scroll down to the message by Thomas Richter). I have used the same method in FSX for a couple years or more and it works fine. Notice he changes two numbers (-512 and 512 are just the dead zones). (Two numbers because you move the left from zero or you move the stick right from zero).

Aileron=-16380,-512,512,16380  ==> Aileron=-20200,-512,512,20200

Notes: If you open FSUIPC beta and it shows Files, Start, Options, Log instead of Files, Start, Assignments, Options, Log it is because you don't have fsuipc7.key file in your FSUIPC  folder. You would not be able to do anything without Assignments.
