Vexing (to me) issue with my aileron axis

The problem is that I don't get full authority of the left (or right - if I reverse the control axis) aileron. On the ground, I perform a pre-flight control check using external views and everything looks good. Once airborne, the control stick animation moves opposite what the my aileron axis input is, and I have limited roll authority. I can input full aileron in one direction, but in the other direction it initially moves and then 'snaps' back. This is confirmed using external views. This repeats across different aircraft, and with both my VKB Gladiator stick and Honeycomb Alpha Yoke.

I have unplugged all controllers except the one I want to use for pitch and roll, and I have set up my control axes multiple times, using both all default values and also tweaking sensitivity. Hoping someone can help me figure this out.

I have had similar things with my rudder.. It turned out to be a sticky Assistance setting.

Repeatedly resetting Assistance to Life-Like cured it.
