Hi,

I heve downloaded the trial version of the program.

in msfs I had the pitch and roll axes setted as S-shaped, how can I replicate that in AAO?

Sorry, no idea. What the aircraft developers do or recommend is out of my control. You will have to decide between the several options of how to control a "thing" in the cockpit. AAO should have all the tools that are necessary to set up any axis the way you want it, like software detents, script control, curves. But this will of course not influence or work with extra control options that aircraft developers decide to include in their creations. I have these axis mapped with three software detents for the "clicks" on the thrust lever and reverse bound to the button action of the lever (Saitek TQs).

Here is a recent example of a script controlled axis for the FBW airbus

Script group: "0 - A320"
Script name: "AutoSpoiler"

When this script is assigned to a joystick axis, pushing the lever all the way forward will retract the spoilers and arm them. Pulling it back just a little bit disarms the spoilers but keeps them retracted. Passing beyond the -7000 spot the axis will come alive. (-7000 is for the thrust master airbus controller)

Edit: to explain this further, because this is a common misconception: the MSFS controller assignment and an external app like AAO, FSUIPC, SPAD are not the same thing. They have the same purpose, but the way that they control things in MSFS are totally different. There is no relation between the assets that you have in MSFS controller assignment and those that you have in AAO. You cannot apply methods intended for MSFS axis to AAO. On the other hand you have a lot more options to make things work the way you want in AAO than you have in MSFS, especially considering the RPN scripting (as shown above with the spoiler axis)
