Yesterday it worked fine. Today I can take off from an airport and have live weather. As I hit almost 100 miles out, the clouds and snow on the ground all completely drop off as in one giant line across the entire area. It looks like a front but when you look at where I was...it should have been clouds the entire way and landing should have been a lot of rain. Not a cloud in the sky. Happened on all 4 flights today. Restarted the sim but no luck. Wondering if the update did anything on my end? All the right settings are on

Same here.  I believe they are investigating the issue (on the MS site).
