I just did the same a few weeks ago. My new MS FS2020 Rig is as follows:

I'll be moving it all into a new Antec C8 Clear Showcase Case, tomorrow!
So far I'm getting over 40 fps in MS FS2020 using a Triple-Screen setup (3) HyperX 27" 2K G-Sync enabled 165Hz monitors. I have the middle screen setup in full-screen mode within FS2020 and the outer screens setup at 1920x1080. The angle of offset is nearly exactly 60 degrees - which looks perfect in FS2020.

My current 3DMark scores are right at 4712-ish, consistently, using AMD Ryzen Master Tool, with Auto-OC and Expo1 Overclock setting. I'm seeing consistent 5GHz CPU speeds, while temps stay between 38 - 58 C. I've also used the New NVidia App to Auto-Tune my GPU up; GPU Tuning +105MHz and VRAM Tuning +200 MHz.
These setting are giving me extraordinary and very immersive, detailed flight experiences. If the Post will allow me, I'll update another post with a link to download a very smooth Center Screen Viceo of the Pre-Flicght Check and Take-Off from the Carrier, GW Bush off the coast of Naples. It's smooth and detailed - ultra HDR at 2K resolution with nearly every Graphics Option turn up, using the NVidia App Auto-Setup and Optimal Config Settings integrated into the MS FS Sim settings.
