The MD-11 tutorial says that choosing DISARM ALL will result in a simulated call into the cabin to disarm. Does that mean I should hear something (like during pushback)? Because I don't hear anything. DOOR OPEN does appear on the EAD, so it works, but I just if I should be hearing somehing nice or not.

Nope, you won't hear anything. You should see a text scroll message that says something like DOORS DISARMED or DOORS ARMED that is in lieu of any cabin announcements.
