Are there any good websites that provide winds aloft data that I can use to plan my Climb and Descent forecasts, am sure there are I just can't find any, I usually fly in North America and Europe regions, thanks.

http://adds.aviationweather.gov/winds/This will allow you to look at winds and several altitudes. I don't know if it goes to Europe, though.
