Can anyone explain MD11 climb stages eg V2+10, VCL

Basically when I takeoff should the thrust maintain V2 or V2+10. Also does the VCL speed kick in when above a certain altitude obviously restricted by 250/10000. I really just want to understand why the plane does what it does on takeoff because it feels like it just does it's own thing sometimes in terms of speed.
