There is an entire section about this in the Learning Center - which is built into FSX.It is a choice on the Main Menu. Select Learning Center, then Index, then Wind.It is explained in detail.

There are a couple of simple things you can try. One is to select 'real world weather (updates)' on the Current Weather section when you create a flight in FS, in which case FS will download METAR weather data reports and create the weather automatically for you as you fly, which will probably include some winds at various altitudes, which when you get up very high, can quite often reach speeds of a couple of hundred knots. Also, you will probably need to go into the FSX 'Settings', choose 'Customise', and on the 'Weather' tab, you will want to tick the options for Thermal Visualisation 'Natural', and 'Download winds Aloft Data with Real World Weather', as well as making sure that the option to 'Disable Turbulence and Thermal Effects' is NOT ticked. The other thing you can mess about with is FSUIPC, which if you have a registered version of it, will allow you to further customise how FS handles weather and turbulence, but you will need a registered (i.e. payware) version of FSUIPC to get that to do all its fanciest stuff. Beyond that, there are a number of other programs you can try, such as Active Sky and REX.If you don't want real world weather, but prefer to create your own wind, on the 'Current Weather' setting when you create a flight in FS, choose 'User defined' and hit the 'Customise' button. You should see an 'Advanced Weather' option. Click on that, then select the 'wind' tab, and you will see all the options for adding custom wind speeds, turbulence and wind direction at various altitudes. Most of it is fairly intuitive to use. If you want to see that data in FS when flying, hit 'shift+Z' a few times, and you should see the wind speed and magnetic heading appear up top amongst a lot of other data about your flight.Al
