I would just like to add some animated flying birds to a couple of places in FSX... is it possible for somebody who doesn't know much about scenery design?

It really is easy! Just one thing.. I had to install SDK before I could install SBuilderX because SBuilderX needed some SDK applications to work properly (I think, that was the error message I got when I wanted to install it without SDK). On FSDeveloper there is a good tutorial how to install SDK, it looks complicated at the beginning (no, really, it looks terrible) but if you (well, me :( ) follow the steps there it's really very simple.
