On other PMDG aircraft, I am able to open these two windows up and move them to another monitor. It seems to be either or, only one of the displays can be enlarged and moved at a time.Is this true or is there another method to display both windows simultaneuosly?

There are .cfg files for the captain's DUs to be undockable. They can be found on the PMDG website under Downloads - User files.
