I think I saw this Captain at the airport bar 20 minutes before my own departure... :Just Kidding:

haha nice picture, is that UT2?

Yes, its UT2 :) I was getting really tired of feeling like I was the only one in the air all the time... Now TCAS is getting a workout! :) It's wonderful too that you'll be flying over Italy and hear Alitalia flight call outs or El Al flights over isreal :) Very immersive!

I set the contrail length to 5 minutes so it's pretty often when I'm on a busy airway that I get the sky criss crossed with contrails that you can see from FAR away :) This was the first time though I saw one that wasn't dead straight, or a gentle curvature of a perfectly coordinated course change... I'm still trying to figure out what was going on with the Captain :)

Oh and don't mind my very inefficient flight profile. I was exceeding optimal cruise to try and catch up with him so I give give him a "#####?!" sign from the cockpit!

With UT in FS9 I watched a 757 dive vertically from way above me right into the ocean near Miami. I first noticed it on the TCAS. I have screen shots but they are on another computer.

Well I think that same flight is still in UT2 for FSX because I had that EXACT same thing happen to me yesterday...was on the HILEY2 arrival to KMIA descending through 10000 on AA985 (IAD-MIA) and I saw a 757 about 1500 feet below me making a rapid descent, maybe 10 degrees nose down, but kept descending and then just disappeared when my TCAS read he should be in the ocean. I thought it quite funny really since I'd not seen that before in UT2. I do find many of the quirks of UT2 quite humorous really. I didn't have a chance to take a screenie because I was given my approach clearance a few moments later.

To the OP: probably why you are seeing the S-turn, and I don't know what causes it, but if he's on the same frequency as you, you'll hear ATC saying "Flight XXX turn left heading XXX, proceed on course." Then thirty seconds later "Flight XXX turn right heading XXX, proceed on course." It can get annoying and usually stops when you are given a new frequency.

If its the same flight, does that mean that maybe it is the spirit of the doomed Captain, being punished for having an evil soul, and eternally damned to meet a tragic end in the oceans off Miami for all eternity? If we send the glomar explorer to that spot, will they find an underwater mountain of aircraft 200 feet tall?

On the one I saw the plane was literally going straight down. I have to fly a trip but I will post the pix when I get back.
