This will sound ridiculously simple to most of you....I was entering the route for Tutorial 2 NGX but missed an airway so I went back to insert it but couldn't. Same issue with waypoints and I couldn't delete discontinuities. How the hell do I modify routes or legs? Sounds stupid but at my age I'm getting use to it.

You delete things by pressing the DEL key on the FMC and then line selecting the DELETE in the scratchpad onto the item you want deleted. You can delete individual waypoints on the LEGS page or delete entire airways or procedures on the RTE pages. Discontinuities don't get deleted - you "close" them by selecting something else over top of them to remove the gap.
