I'm pretty new to gauge design and was wondering if it is possible to design a gauge where you can type in the Course or Heading you want. Essentially you would press a button then type in the new Course value or Heading Value. Thanks!

Well yes, of course you can do that even in XML, but it is rather complex even so.

Conduct a search for " Cockpit Commander " its a freeware gauge that does basically what you are after,

and it allows the typed data to be fed to your autopilot.

It's a neat instrument that also allows radio frequencies to be entered.

 

It should be available at Flightsim , Simviation and possibly at Avsim websites.
