Can someone explain the proper way to read this gauge.. and what numbers I am shooting for when adjusting the mixture for this plane.

 

I was wondering that myself. After a little research it appears this is a not fully modeled/basic version of this instrument. I did find this page which may shed some light on it's operation. http://www.jpitech.com/pilotguide.php
