There's the options panel (IIRC it's Shift+2), on which you can switch between auto-sweep and manual. In manual mode it's the done with F6 and F7. As far as I remember, the F-14 deals with wing sweep as if it were normal flps stages, so F5 would retract the wing fully to the back, and F8 would probably bring the wing back to the front, and also applies full flaps. About the second one I'm not so sure, though. Maybe it's also F8 brings the wing back to the front, and F8 again extends the flaps to full stage.

 

It's been a while since I've flown the F-14 the last time, so maybe I'm not right about the keys for manual wing sweep.
