if we install 2gb dedicated gpu cards, either in one card or in 2 separate cards format, does FSX use all the 2gb memory available in the pc while flying? or does it only use a certain amount of the gpu system memory?

I hit the 2GB usage frequently in FSX if I get crazy with the settings. I am about to upgrade to a 4GB because it is overkill.

But yes, I have had FSX use my card to the max before.....it will take what you can give it if running HD textures from REX, addons and such.
