It works just fine here and no one else has reported any problems at all. Are you sure you have opened the correct dialog box. The Assign option in the Camera dialog is the only multi select box, all the others are single select options only. I will try it in the demo mode as well but make sure you are using the correct dialog box.

I have tried 2.94.4 in both licensed UNLIMITED and LIMITED demo modes with no problems, opening the 'Assign Aircraft Types To Your Camera View' selection dialog (the wide button about one third of the way down the dialog), both the Ctrl and Shift key multi select methods work just fine.

No problem. You shouldn't need to use the Restrict... option at all, that's only if you have many views configured and want to restrict the displayed list. The Select... Option is for selecting a single camera view to edit, and its the Assign... option that allows you to assign one or more aircraft variants to your camera view. For example, assigning all PMDG 737NGX variants.
