Intro manual.  Aircraft Options.  There is an additional setting under Simulation, I believe.

 

Manuals are killer sources of info, and should be read.  The intro manual will end up pointing out a ton of cool stuff, too.

which callouts are you missing? - - V1-VR-V2, you can fix that by turning them on in the FMC.
