Dual booting from SSD and HDD

I just bought a new 240GB SATA 3.0 SSD + Win 8.1 Pro and am planning to boot 8.1 on it, while keeping my Win 7 HDD bootable. I've seen all sorts of tutorials on the installation of the SSD, but they never mention what happens to the old HDD.

 

So here's my question - is it possible to dual boot Win 8.1 from the SSD and Win 7 from the HDD on the same PC via the boot menu or do I need to buy a brand new computer for Windows 8.1 and refund the SSD?

Okay thanks! Just wanted to make sure before I make the move - the tutorials had me unplug the disk I'm not booting, whereas I want to keep everything plugged in so I don't have to manually open my case, unplug / replug a SATA cable, and restart every time I want to boot into Win 8.1 or Win 7.
