Can any of you fine people point me to the page in the extensive 737 documentation which shows me all the relevant weights of the aircraft so I can use this in Simbrief? I have looked but cant seem to see it.

The FCOM is a generic one, which is why you won't see anything specific. You're better off looking at the values in the aircraft.cfg (do not change them, however).
