I understand that the 3 monitors are better But what? 27 "or 34" What characteristics should I have? I would also use them for driving simulator

Don't use 3 x 34" ultrawide it looks ridiculous, max AR 16.10. I would look into 30/32" 16.9/10 displays, the resolution is also a good thing to consider I use 3 x 30" each display as a res 2560x1600  I believe you could run that in a single card like 1080ti  but don't expect 80/100 FPS I get 20/30 on my system.

So in the end with a 1080ti and 3 monitors 16/9 I did not over 30fps with the various addon pay?!

With so many variables it is hard to give a definite answer If you look my signature you can see System I  have almost 8000  x 1600 res with  3 x Titans X  Sim max I get 20/30 FPS

now if I drop to 1 monitor (2560 x 1600)  it goes to 80/100 FPS, the new 1080ti  which I don't have is pretty powerful and has plenty of memory but not powerful enough to run that kind of res @ 80/100.  My guess if you get 3 x 1920x1080 monitors you would get decent FPS.

I have three of these 4k monitors at about 30 degrees offset sitting on a table I made out of a 4' x 8' piece of plywood .  The immersion factor is incredible as the 3 screens total 8 feet wide even with the offset.  Also, they've come way down in price, (relative to when I got them).

I had an issue driving these three 4k's at full resolution until I overclocked my gpu.  Once I did that, I've had no issues.

I would recommend 2 curved ultrawides with thin bezels.
