I noticed that there is a gauge that reads slow / fast with a needle that moves between them.

What does this gauge do. No reference to it in the documents and I have not come across this any other airplane.

That gauge is normally adjusted to display the approach speed for the present configuration (stall speed x 1,3).  The range of movement is normally between +5 or +10kts.
