I am just trying out X Plane after being a FSX/P3D user. I notice that you cannot bring up individual gauges with the shift F key combination like you can in the other sims. Am I missing something or is their a whole new world to discover. Thanks.

In general individual gauges cannot be popped up. The GPS can be popped up if you click on it.

If you need to interact with a specific area of the cockpit, you can use the custom quick view feature. See for example this explicative video:
