So what am I doing wrong?

Since installing P3D v4.2 (fresh install), the graphics defaults to my 1920X1080X32 monitor and even if I try to select my 4K (Nvidia Geforce 1070.1 inside the options) it just reselects the other. And, of course, I cannot save the 1070.1 either. I tried deleting the 1070.0 from Prepar3d.cfg but it returns on the next restart. 

Could have sworn I had this correctly in 4.1 but now am starting to doubt myself. Any ideas?

Set them in the Nvidia Control Panel - you can select which is primary there.
