Hi,

 

I would go for the latter option. I think the VRAM advantage on the GPU  in your second option will pay more dividends with 8Gb VRAM.

I have 16BG RAM on my system running P3D v4 and v5 and this works just fine on my system. 32Gb RAM is certainly a nice to have but not absolutely essential.
