Click on NavLog and you can set it in there! Always worth a check since my last TBM flight it defaulted to 32000 feet!

The sim will choose an altitude for you based on the aircraft type (to some extent, sometimes you might wanna tweak it). What it won't necessarily do is choose one following the exact rules for the airways you plan on going along, but you can tweak it on the nav log.
