Looks like FlightsimExpo will be in San Diego June 4 - 6 2021. Hope they can pull it off next year.

That sounds like a good choice. Plenty of aviation history there, a great aviation museum nearby, and lots of other things to do with the bonus of the beaches to interest the wife/other and the kids.
