I downloaded and installed the GAIS in the MSFS  community folder. Then looked for the View/Show AI and Multiplayer Ships but that was greyed out. I updated the Scenery library and still no luck. I need some help to get the ships to show on the map again.

I'm about to test this but it should work as far as I've seen on screenshots in MSFS forum.

Check the connect dialog if AI ships are disabled. This is a reson for the menu item being grayed out.

Alex, You are correct again. Once MSFS was loaded it stopped being grayed out and lots of ships were visible.
