I've been struggling with the sensitivity settings for the rudder and I am getting frustrated because it's way too twitchy.

Any help would be most appreciated.

Any body care to give me some help on this issue?

Might not help you much, but just on the off chance that it does, my T Flight rudder is set on this and I use the axis on the throttle for that, not the one on the stick:
