I'm trying to fly my A32NX into KLAS. Tried ILS 01L, 26L and others.

Using SimBrief I'm getting CLARR3 arrival into 26L but there's nor CLARR3 on my MCDU. The only C's I get are CHOWW1, COKTL1 & CRES04. The other option I've tried is via 01L which uses CLARR3 or KEPEC6 but there's no STARS beginning with K at all.

How are you meant to fly into KLAS? Am I meant to just pick one and then using the plan knob and the right range look on my PFD?

Without knowing your origin to KLAS, by using an active STAR. CLARR3 appears to no longer be a valid star hence why it isn't showing up on your relatively up-to-date nav data.

MSFS is more up to date. Though it's currently one AIRIC cycle behind, but I imagine that will be fixed with the update next week.

Both should be equally up to date.

In Simbrief, you need to "Unlock" the current AIRAC using your Navigraph credentials. The current version is 2017.

For MSFS, you need to run the Navigraph application. Check the version of AIRAC cycle that is currently showing as installed. If it is earlier than 2107, click the "remove" button. After it is removed, the button will change to "install". After clicking install, the version should update to 2017.

Correct, the Navigraph subscription is payware.

It should be pretty obvious in this case given SimBrief is giving you a Star that was cancelled in April. As others have noted, you can keep simbrief up-to-date through a Navigraph subscription. Assuming you are trying to replicate a flight between two airports in the United States flightaware is a pretty good planning resource for actual routes i.e. this is for San Diego to Las Vegas https://flightaware.com/analysis/route.rvt?origin=KSAN&destination=KLAS
