when ATC tells me to land via VOR 03L, i change the F-PLN arrival, and utopilot starts turning to the route back. Why?

Please be more specific. Plane? Airport? You may have just run into the fly back bug. Or you were so close to the airport that adding arrival and possibly a STAR leads you away from the arrival airport towards IAF.

That's just the approach flyback bug

Set a direct route - DIR to the first waypoint of the approach path immediately after setting the approach in the MCDU to overcome this issue... if the approach path contains USR waypoints, you will have to repeat the "DIR trick".

They promised to fix this bug with SU6 but they didn't. We will have to wait at least until Feb 2022 according to the last feedback snapshot.
