I don’t have a store nearby where I can see these (though I suppose I could test 2k on my current monitor). But I don’t know how much resolution, sync capabilities, panel type, and response times will make a difference with MSFS or XP11.

Which BenQ monitor do you have? I've had my PD3200U for 3 years and am perfectly happy with it even though it lacks Gsync. It can run at 30Hz making it ideal for me in P3Dv5.

Curved or flat is a personal choice. I could never go down to a lower resolution. Only you can decide that but with a 3080 it's more than capable of 4K as you probably know. 32" 30Hz 4K would be my choice.
