Set the ATC window not to open automatically, turn off all flight assistance from the AI having to do with ATC/comms, and turn off ATC voices.  Then you can just totally ignore any in game ATC and use Vatsim.  Obviously make sure to disable live/AI traffic as well or you might get some interesting results
