Under Copilot Options, is it possible to check the "Responds to Radio"  box and uncheck "Changes Frequencies"? I'm on v2.6.3.2_x64_Public_Beta_8A, and if I check Responds to Radio it automatically checks Changes Frequencies. If I uncheck change freq it unchecks responds to radio.

I like the readback to be automatic but like to change frequencies myself.

No.  That is not a possible option.  Part of responding to the radio is to execute the frequency change commands.

Is there a "readback" button one can configure? I sometimes fly in a shared family area so don't wish to talk out loud.

You can just press the "SayIt" button at the bottom of the main screen to do all the readbacks and responses.

You can use "SayIt+" to have more control over the responses, and more importantly to customize requests, etc.
