For example, use POV hat to re-assign "Bindings for User Camera Translation" defaults (on the Switch to VR menu screen) which are currently assigned to keyboard arrow keys (these adjust the pilot's viewpoint).

Yes, that can be done and assigned just the same as any other button or key. I use this for tweaking my VR position in some aircraft.
