Can someone tell me where the option is to turn off the nose 'barb' on the user aircraft. Can't find it.

I'm not sure which one you mean without a screenshot.

A black needle   is the aircraft track and can be switched off in options on page "Map Labels", branch "User Aircraft". Deselect "Track Line" there.

There is also the dark green turn flight path  which can be disabled in main menu "View" -> "Show turn flight path".

The map legend (https://www.littlenavmap.org/manuals/littlenavmap/release/3.0/en/LEGEND.html, open from menu "Help" -> "User manual - helpful chapters") can help to identify such things and points to the options to disable them.
