I set the panel to appear along the bottom of the world map so I can see the terrain profile during a flight, but must have pushed a button somewhere as it has now disappeared.

How do I get it back?

Try LNM menu "Window" -> "Dock Windows" -> "Flight plan elevation profile". Or press Alt+4 to toggle.
