Hector, please sign with your full name. What airplane? The JS41? Yes. FMS never needs to be turned on, and you can fly VORs to your heart's content.

I was concerned about this too. I am also the kind who likes to load up the sim and just fly. On occasion, I do enjoy sitting in the MD-11 flight deck for up to an hour setting up the systems for an 8m hour flight... But I found the J41 to be a very fun "free flyer".
