I just want to enjoy all things above but I do not want the FO to turn any knob or lever because I want to do that myself also

So the PMDG keyboard setting shoudn't be overwritten by FS2crew and should stay the way they are now.

How to achieve this?

Manually delete the keyboard assignments.

 

Note, however, that the mini-panels will still appear.

 

But you can delete them from the panel.cfg if you know how panel.cfgs work.

Do I have to delete this every time I start the sim or is it just once?

The mini panels are ok I like that too but I only want to control all buttons and levers myself.

If I go to the PMDG keyboard settings I see no keyboard assignments from FS2crew only my own but during my preflight the FO is still turning knobs and switching levers.

He's probably using the Mini-Panels.

 

You'll need to open the panel.cfg file with Notepad and delete the mini panels.

 

You'll need to re-adjust the Window numbering.

 

If you look at the Window titles, it's pretty easy to tell which FS2Crew Panels are the mini panels.
