Where can I find a good checklist for the Boeing 707? I am really getting into flying Captain Sim's, but would love to have a realistic checklist.

Did you try the ones Captain Sim provides? Can be found here: http://captainsim.com/products/x707/manuals.html, checklists are in part III (normal procedures).

Thank you. I didn't look for the obvious. I guess I downloaded those manuals when the product was first released and Captain Sim hadn't released all of the manuals yet, so I was missing some.

Beware that for the 707 series there's a gazillion variations and many of them are so different to the point where a checklist made for one aircraft might not work for another because of different switch placement, different systems, different engines etc. It got to the point where the master flight manual became "for reference only" and people have to rely on the differences manual if they want to study the aircraft.
