I noticed when I load the 737 and choose "engines running" option from the menu in the FMC, the HUD is missing the speed tape, altitude and the compass. If I load any other panel state the HUD is fine. It is 100% repeatable for me.

 

Can some one check if they choose "engine running", do you notice the same.

Check what mode the HGS is in, think it should be pri imc. Use the mode button and the button below that on the HGS control unit in the center console to change it.

I didn't find it in the manual either.

Yep as Hellfire said, put it in PRI mode.

A bit of reading, and testing in the cockpit. After an ILS landing, I turn off the runway and to get the HGS into the correct mode for the next flight you press Mode 3 times and STBY 1 time and your ready to go. You can also taxi in with a blank HGS to help you see by pressing the CLR button. I usually do 2 or 3 flights together so I had to learn the HGS modes, is fun using GSX if you give yourself a short turnaround.
